Unlike commercial kitchens, every rempah (spice paste) is hand-crushed in a stone mortar and pestle to achieve a superior, variegated texture and depth of flavour.
The menu features rare starch-based heritage dishes, such as the aromatic Nasi Kabuli, which has largely disappeared from the public culinary sphere.
